INGREDIENTS
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
6 (4 ounce) boneless skinless chicken breast halves
3 tablespoons vegetable oil
1 (16 ounce) jar salsa
1 (12 ounce) jar apricot preserves
1/2 cup apricot nectar
Hot cooked rice

DIRECTIONS
In a shallow bowl, combine the first four ingredients. Add chicken; turn to coat. In a skillet, brown chicken in oil; drain. Stir in salsa, preserves and nectar; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until sauce thickens and meat juices run clear. Serve over rice.

This recipe is awesome. We do, however, prefer peach preserves to the apricot but it is yummy! It's easy and tasty. It has become a favorite of my 7 year old nephew Travis. Thanks for sharing.

I absolutely love this recipe. I have used it a couple times and found that it is a nice addition to add a can of apricot halves to it as well. My boyfriend loves it and he is really really picky!

I am not one to normally open jars and cans to cook, since I am a severe make it from scratch person (go ahead and call me crazy, you would not be the first (-: ), but I am looking for easy things to serve at an Open House we are hosting. I tested this with the chicken cut into roughly 1" cubes (since that is how I would serve it at the Open House), but otherwise followed the recipe, and it was delicious! Both kids (4 and 6) had seconds and my husband’s grandmother, who made a face when I told her the ingredients, cleaned every last little drop off her plate! I have to admit I will be cooking this again. I am testing a helping in the freezer but judging from the ingredients it should freeze just fine. Thank you for sharing!

Very easy to make, a nice and simple meal when you don't have a lot of time. Tastes a little like sweet and sour chicken. I would make this again for sure.

This was so easy to make and very good. I'm anxious to try it again with peach instead of apricot and maybe add in some veggies.

I thought this was really boring. It just tasted like plain chicken breast with sweet salsa on top. I was really disappointed since the other reviews were so positive. Couldn't have been easier to make, but I still won't make this again.

Awesome recipe! I'm on a diet and I prefer fresh fruit, so I made my own salsa out of chopped apricots, onion, chipotle chilies, tomatoes, and hot habanero peppers. I used whole wheat flour. Instead of paprika I used cayenne, and instead of nectar I mixed honey and Pam (or melted butter would work) together to get a slightly thinner consistency than the honey. Thank you sooo much for this recipe. It was wonderful and I'm sure I'll make it again.

I took a chance on this because it sounded so good, and it was absolutely delicious! I only made two breasts though and I cut the sauce by 2/3. Next time i'll only cut it down by 1/3. It wasn't too thick, there just wasn't enough. All in all a delicious dinner that I'll make again and again, and probably change the fruit around.
