I had a similar recipe years ago, but lost it. This one was much easier and just as tasty! Made as written, but added toasted almond slices to the finished product. Yum!!

Chinese Chicken and Potato Soup

Very Tasty. I had some cooked chicken leftover so I simmered the veggies in chicken broth until soft and then i just threw in the diced chicken. This is one of those recipes were nature's ingredients are the star and nothing fancy is needed to make it a winner. My husband and children ate this up. Thank you for sharing!

Southwestern Egg Rolls

I made the mistake of using egg roll wrappers instead of the tortillas. The filling I think is way to dense (and perhaps to moist) for the delicate egg roll wrappers to handle. ---But that was my mistake, not the fault of the recipe. It sure did have a kick to it!! Pretty good...I served with sour cream.
